Pupusas Salvadoreñas x Sparkling Ice

As a first generation Salvadoran American, it is very important for me to learn traditions and pass them down to my daughters. I grew up eating some of the best food you can imagine, from platanos con frijoles for breakfast to the famous pupusas everyone loves. The pupusa is a thick handmade corn tortilla made from cornmeal dough usually filled with cheese, beans, chicharron, (cooked pork meat with veggies ground to a paste), or now a days you can mix it up with basically anything you can find in your fridge.

This Hispanic Heritage Month I want to share a very simple Pupusa recipe and hopefully you are inspired to make some from the comfort of your home. While you are grabbing all your ingredients at @Ralphsgrocery or @krogerco for this recipe don’t forget to also pick up a Sparkling Ice Orange Mango. It’s not only refreshing, fun, bold, it also contains zero sugar. Sparkling Ice is the best beverage to accompany foods or beverage recipes as it offers variety of fruity flavors.

MASA FOR THE PUPUSAS

  • 4 cups masa harina
  • 3 cups cold water

FILLING

  • 1 cup grated mozzarella cheese
  • 1 cup steamed spinach, cut up jalapenos (If you have chicharron in hand, I definitely recommend using it.)
  • 1 tablespoon vegetable oil, for frying

LAZY CURTIDO

  • 8oz Coleslaw Mix
  • 1 small white onion, sliced
  • 2 cups boiling water
  • 1 cup distilled white vinegar
  • 1 tablespoon dried oregano
  • 2 teaspoons kosher salt
  • 1 tablespoon red crush pepper (optional)

To prepare your curtido you want to grab a large bowl, combine coleslaw mix and chopped onions. Pour boiling water and vinegar over the vegetables and toss. Add oregano, crush red pepper (optional) and salt. Combined. (You can add salt to taste at this point.) Once it’s all mixed you can transfer the curtido to a mason jar or any airtight container. Set inside fridge. 

In a large bowl, add your masa harina then add the water. Use your hands to mix until the dough comes together. The masa will be really soft, you want it to be like playdoh consistency. 

*This next step is very important, trust me! Fill a small bowl with water and a bit of oil and set near your workstation. You will want to keep your hands wet with the mixture as you work to keep the dough from sticking to your hands.

Grab about 3TBS of dough and roll into a ball, then flatten into a circle. Fill the dough circle with ½ tablespoon mozzarella, 1 teaspoon of spinach, and 1 teaspoon of jalapenos.

 Fold the dough over the filling until it’s completely sealed and back its shaped back into a ball.

Then, pat out the ball between your hands until flat. Heat a large pan or comal (griddle) over medium heat. Add vegetable oil, then place pupusas on the pan and cook for 4 minutes or until the bottoms are golden brown. Flip and cook the other side for 4 minutes or until golden brown.
