Maggie’s Cucumber Lemonade

When your father in law brings you lemons you must make cucumber lemonade! Seriously though if you haven’t had cucumber lemonade by now who are you?! You are missing out on one of the most delicious drinks ever! It’s very refreshing and even better if you add chia seeds and some mint leaves to it. I usually only add this to my glass because I know Steven and the girls don’t care much for those things.

Besides that the girls love it and they love helping during the whole process. They love to “squeeze” the lemon juice out (lets be honest nothing actually comes out of them… hehe) and eating the cucumber before I get a chance to garnish the drinks for some pictures. Wait till they actually know about lemonade stands and want to set one up in the front yard! I honestly can’t wait for that day, actually! The inner kid in me squeals anytime I get to do something with my girls that I didn’t get to do in my childhood days because well, I did grow up in the hood and that should explain most of it right.

So, what does a kid/teenager do to entertain themselves that grew up in such place? Well, let me tell you guys I would cook, bake and come up with some odd, looking drinks. I honestly loved it and still do till this day. I used to come up with some of the weirdest things (especially in my easy bake oven) and yes, my sister and cousins were my taste tester and still are till this day!

Well a few years ago for Thanksgiving I decided to make cucumber lemonade. At the time I literally eyeballed everything and guys it was a hit! My taste testers approved and it is now a staple for most of our family parties and always a crowd favorite! So, I decided that it was time to put it out there and share this recipe with the rest of the world. I hope you guys enjoy it as much as my family and I do!

What you will need:

2 Cucumbers

1 Cup of Freshly Squeezed Lemons

9 Cups of Water

1 Cup of Sugar (You can substitute with any other sweetener)

Recipe:

  1. Squeeze the juice out of about 10-12 Lemons to make 1 cup
  2. Peel the two cucumbers but leave some of the skin for color
  3. Blend the two cucumbers with 3 cups of water
  4. Strain the juice of the cucumber
  5. In a pitcher add cucumber juice, lemon juice, 6 cups of water, 1 cup of sugar and mix well.
  6. You can add cucumber bites, Chia seeds, Mint (Optional)
  7. Pour over ice and enjoy!

This recipe makes approximately 32oz. You can always cut it in half or double everything up if you need to. Let me know what you guys think!
