I cannot believe that my little princess is turning 2 tomorrow! Even though it feels like she was just a baby yesterday, she’s now a full-blown twonager. Time literally has flown by.

I mean look at her! She’s so beautiful!

Well today after a long rainy, busy day I made her a small little cake for tomorrow. It’s nothing crazy or fancy but something I literally just threw together maybe within two hours, because well #momlife. I used my favorite box cake from Trader Joe’s. Its called Vanilla Cake & Baking Mix. I absolutely love the taste and it’s always so fluffy.

I always make home-made frosting. As of lately I am on an almond flavor binge. It just smells amazing and it taste wonderful. I did just a couple of drops of it and one drop of the food coloring and ta-da!! We have this beautiful almond flavored pink frosting. I added some left over strawberry jelly to each layer. Then just kinda scraped the frosting on the cake. Like I said this time around I really had limited time unlike last years smash cake I made. I think it looks perfect though and when she saw it she just smiled big!

Now I can’t wait for morning to get here, not only because we are having cake for breakfast but because we are off to her happy place, Disneyland to celebrate my little Mickey & Minnie Mouse loving girl!

 

Almond Frosting Recipe

(This will cover a small cake or about 12 cupcakes)

1 Stick of butter (4oz)

2 Cups of Powdered Sugar

1 Tsp. Almond Extract (Optional)

Coloring can be of your choosing

Put softened butter in mixer bowl and start mixing slow then gradually up the speed. (To softened butter I usually leave it on the table while I prep cake batter and start baking.) Add 1 cup of powdered sugar, turn your mixer to the slow setting and gradually up the speed. Stop the mixer and with a spatula clean the sides of the bowl and mix in. Add 1 more cup of the powdered sugar and mix again. It should all be mixed and fluffy within a few minutes, Stop the mixer and add your extract of choice and food coloring and mix again. Make sure your cake is fully cooled down before applying the frosting. You can store this in an airtight container for up to one week. Enjoy!
